WARNING: Depending on where you live, making or distilling alcohol can be illegal without the proper permits or licenses.

Note: For a sugar wash, you probably don't need to sterilize anything. Just wash it with soap and water. The presence of other microbes can alter the taste if you plan to drink it.

This is a very basic way that you can make your own DRINKABLE ethanol at home. The main premise of this video is to show just how simple and easy it is to ferment your own alcohol. In a future video, I will try to dispel some myths regarding homebrewing, such as the exaggerated risk of methanol poisoning. I will also demonstrate how easy and safe it can be to distill your own ethanol from the wash that you produce.

In this video, I prepare a sugar wash (fermentation of sugar only). The process is similar to the preparation of wine or beer, but uses pure table sugar instead of a variety of different sugars, fruits or other additives. Also, more yeast is used in order to speed things up a little.

The final product should be ready in a week or two. If you want to drink it, you can. Just clear it first using a clearing solution and clean the taste up using activated carbon. It still won't taste very good though.

NOTE: Be aware that there are some things that when added might be dangerous. So, please, if you decide to add something to the fermentation, please verify beforehand that it is safe.

RECIPE*
------
▪225g or 1c warm water (90F/32C)
▪350g or 3c bread flour
▪10g or 1 3/4tsp salt
▪8g or 1 3/4tsp instant yeast
▪30g or 3Tbsp warm water (86F/30C)

Add flour and 225g/1c of the 90F/32C water to a bowl and stir to combine. When dough has combined into a shaggy ball, begin to squeeze and pinch the dough with a very wet hand. When the dough forms a less shaggy, more cohesive ball, add salt to top of dough. Cover dough.

In a separate container add yeast and 30g or 1/4c of the 86F/30C water and stir to combine. Allow both the dough and yeast mixture to sit for 15-20min. Add yeast mixture into the salted dough. Mix with a soaking wet hand by pinching and turning. Once yeast and salt are fully incorporated, cover and allow to rise at room temperature for 30 minutes.

Perform a strength building fold as shown @2:29. Cover and allow to sit at room temp for 30 more minutes. Perform a second strength building fold - see @2:59. Cover and allow to ferment at room temp for another 90 minutes.

Place a piece of well oiled parchment on an upside down sheet tray.

Flour work surface and dough and flip dough onto work surface. Divide dough into two equal pieces (300g each). Degas and preshape dough balls as shown @3:50. Cover and allow to relax for 15-20min.

Shape dough balls into baguettes as shown @4:22. Place shaped baguettes onto oiled parchment, cover and allow to proof at room temp for 60-90 minutes. I’m using the foil pan linked here: https://amzn.to/3JLY3l4 . After proofing, the baguettes should have risen by about 50-60%.

Spray well with water, then score the top of the baguettes, cover again with foil pan, and bake in a preheated 450F/230C oven for 30-35min, carefully removing the cover after 15 minutes of bake time.


*for reference, the “room temp” of my house at the time of filming this video was 69-70F/20-21C.

IF USING A STAND MIXER:
Mix flour and water in a stand mixer on med low for 4-5 minutes or until dough forms a shaggy ball. Add salt to top and allow to sit for 15min. Mix yeast and 30g warm water an let sit for 15min. Mix yeast Into dough on low for 4-5 mins or until a ball forms. Cover and allow to sit fir 30 min. Follow above instructions starting with the first strength building fold.

Making your own soy milk is super easy and super cheap! All you need is some soy beans, water, a blender, a pot to cook it in and something to strain the milk like a nut milk bag, a jelly bag, or a few layers of cheesecloth.

When you learn how to make homemade soy milk, you can flavour it with your choice of sweetener for drinking OR use the plain soy milk to make other things like your own tofu or cultured cheese. Keep in mind that this soy milk tastes very different from most commercial brands which usually have a dozen ingredients or more. But this is so easy and super cheap to make, I hope you’ll try it.

EASY SOY MILK RECIPE

Makes about 5 cups

INGREDIENTS

1 1/4 US cups dry soy beans (200g)
5 cups water (1200ml), plus more for soaking and rinsing
Optional sweetener to taste (like sugar, agave, maple syrup or stevia)

DIRECTIONS

Soak the beans in fresh water for one or two days in a large container. Make sure there is enough room for the beans to expand to triple their size. Add water if the water level drops below the top of the beans.

Drain the beans and transfer to a large bowl. Add enough water to completely submerge the beans.

Rub the beans between your fingers to remove the skins. Remove the skins from the bowl by mixing the beans around and letting the beans settle to the bottom. Then skim the top to get at the loose skins. Discard the skins. Try to get most of the skins but don't worry if there are a few left.

Drain the beans.

Blend the beans with 5 cups of water until the beans well pureed. This took about one minute with my regular 12 speed Oster Blender on the Liquefy setting. If you have a high speed blender, take care not to over blend. You may need to work in a couple batches depending on your blender's capacity.

Strain the liquid into a large pot using a nut milk bag, jelly bag or a few layers of cheesecloth over a colander or sieve. The liquid will be your soy milk. The pulp, known as okara, can be discarded or used in other recipes.

Heat the milk on high heat until boiling while stirring regularly. The milk tends to form a skin at the bottom of the pot so stirring is necessary to keep this from building up. During this process, a skin may form at the top; this is normal and known as yuba. The yuba can be stirred back into the milk or skimmed off.

Let the milk boil for a couple minutes; stir and reduce the temperature as needed to prevent the milk from bubbling over.

Reduce the heat to medium or medium low. At this point, it's a good idea to taste the milk. It may be a bit beany tasting and bitter. As the milk is cooked, the beany and bitter taste will be reduced. Let the milk simmer for anywhere between 10 minutes to 2 hours. How long is up to you.

When ready, strain the milk into a container.

Serve the milk hot or cold. Add sweetener to taste. I use about 1 or 2 teaspoons of maple syrup per cup.

NOTES

Store your fresh soy milk in the fridge for up to 3 days. The leftover soymilk pulp (okara) will also stay fresh in the fridge for about 3 days.
